It's just clunky dialogue delivered in an awkward manner. He could have said a similar line with better delivery and it would've been fine.

Now "the Sith only deal in absolutes" is one that I'm entirely not sure if it's intentionally hypocritical or a mistake.

Because up until that point the "Jedi being evil" had never come up at all, it was completely irrelevant to why Anakin turned and it was never an opinion he'd even come close to expressing before.

Anakin knew what he was doing was wrong, it was just a really lame retort to Obi-Wan's assertion that Palpatine to was evil (which is also a bad line but not as bad).

It's this. If he had said "The Jedi are the evil ones!" or something like that instead it would have been way less ridiculous.
