It really depends on the game. And some games give a choice on which to optimize more.

some games will have a "Quality Mode" which is 4k, 30fps, and a "Performance Mode" which is 60fps, 1080p-1440p. Usually, as it will depend on the game. some games have a mix of both, and some games can do 4k 60fps but just have reduced graphic effects.

It depends on the game. But some offer parity with PS4 at higher frame rates, or a higher resolution (usually checkerboard). For unsupported games there is usually little difference. It will help out with unsupported games that ALMOST hit 30fps, like Bloodborne or The Last Guardian, but if fps targets are already good it won't change anything. I believe there can be slightly faster load times as well, but I'm less sure about that.

Most Sony exclusives offer a choice of a higher resolution or higher quality graphical settings. Hitman games, IIRC, have options for 4K and 60fps modes. Previous gen ports like the Borderlands and Kingdom Hearts collections offer 4K 60fps. So as a general rule, you get a resolution bump (typically checkerboard 4K), some graphical flourishes, or once in a while a higher fps.

Edit: I'll add a note that the One X has much more notable improvements without developer support.

Going by FFXIV, the PS5 lets you use the Pro version, unless I'm wrong.

It does. As an aside, late gen games started added very unstable modes with a 60fps frame cap. They run like crap on PS4 Pro, but lock or nearly lock 60fps on PS5.
