But, like so many Southern dishes, the real story of shrimp and grits goes back much furtherand embodies the painful past of slavery. For the book, I spoke with Michael Twitty, food historian and author of the James Beard award-winning The Cooking Gene. Id heard him speak during the 2016 Southern Foodways Alliance Fall Symposium, where he gave a talk titled Black Corn, which traced the roots of several corn-based dishes back to Africa. During the talk, he boldly declared, I dont care what anyone says; shrimp and grits came from Mozambique. The statement came with backuphe told of dishes from that country involving corn and shellfish, a combination that appeared long before anyone in Charleston was eating it for breakfast.

only 3, peach cobbler, chicken fried steak, and cornbread. that's surprising, because my dad is a good ole boy from Texas through and through, and my mom has learned to make several dishes he liked when he was growing up. where is the southern style biscuits and gravy on the list? or the porkchops and applesauce?

A lot of these you're only going to eat regularly in east Texas. The ones I had most regularly growing up on the southern coast were the more Cajun/Louisiana dishes. I've eaten a ton of them, but most are just more rare to have because of where I grew up.

I got 12, but Im from the Deep South. Some of that stuff is flat out gross and a lot of people there eat gross stuff just to say they did it.

Congealed salad sounds nasty & fried squirrel seems sus but some of the more out there ones on here are actually pretty good, frog legs arent that dissimilar to wings for example.

Also, I had no idea deviled eggs were southern. The rest of the country is missing out. Peach cobbler is awesome too.
