wanted to see what the deal was with plating in a circle like this, but it was pretty great since you can control that the eater gets enough everything.



Its boneless porkchop with potato pur, deep fried potat peels, confit cherry tomatoes, honey glazed cooked carrots, a dressed salad with mache salad, carrot tops, thyme and some tomatoes.

I overcooked the pork but man it was great. No need for sauce since the confit tomatoes burst with fluid which works so well with the rest.

I love that I barely had any waste. Using as I said the green carrot tops (they taste nice when they are fresh) and using the potato peels as well. There wasnt much of the peels on the plate but I now have some snacks.

Looks like you would have to eat it immediately or else it would be extremely cold.

It looks good, but that is one thing I hate about this plating craze. The quality of the food service always suffers.

Temp was fine. Just gotta plan ahead and keep the stuff you want warm warm.

I like to try to figure out what it is before I read the ingredients when you post this, I got the pork, carrots, and the thyme right. I completely missed the cherry tomatoes thinking they were all carrots.

I need to take pics of my garden but I grow a ton of veggies and herbs every year, so at the least I know my herbs.

I can understand that.
I dont particularly like the circle presentation I keep seeing but now that I tried it I can understand whats good with it, it was nice that each bite you got little bit of every component the way I intended for them to work with each other.

If I plated it more rustic it would be up to the eater to pick what to eat and could miss out on the intended way to get the flavors.

I was full at 3/4th the meal. It was plenty of food.

I used to eat really big portions which wasnt good for me so Ive cut down on my portions, my stomach has shrunk.
