Not that I ever would, but like if I did share info obtained in a mistake email with someone, is that actually illegal? Or is it a "sucks to be you get better with your emails it's literally 2021" situation?

No. Nor does it dispositively cover the sender's ass from consequences if confidential information was improperly sent.

The only way something like this would be enforceable is if it was in the ToS of the email provider that you agreed to when you signed up.
