You're putting the onus on the trans person in that situation. It's on the person who is now no longer attracted based on assumptions. That's why it's transphobic. Going to repeat this again, nobody is going to force you to be attracted to or date transgender people. But refusing to date any and all of them on that basis alone is transphobic.
