Reflections and what Ive learned doing this dish:

Barely have salt in it, recipie had almost no salt, surprised I dont need to, a good thing!
I didnt think the sauces were so veggie heavy.
I was scared of the spice, tastes very bitter but cooking it removed the bitterness.

What do you think about the toasting then frying of spices? It's a bit of faff but I think it all makes a difference, so long as you dont burn them.

I.e.

  1. Toast whole spices on dry hot pan
  2. Grind
  3. Fry in oil
Doing this as a first step and not just throwing in spice mix.

I did toast them in a dry pan, its kinda mandatory if you want to open up the flavors. I was aftiad I burned them since the mix became so bitter but I didnt it seems. But next time I will toast them a bit less.

Ive never eaten curry before. Is cinnamon a normal ingredient for it?

In many Indian curry it is as far as I know.

I love being creative. And having those 2 outlets is awsome.

Tho for this dishbI followed the recipie mostly, I changed it a bit with more quantity veggies and other small stuff like adding chick peas.

Now I want to make my own curry spice blend and curry and be totally creative.

Also another thing, it has perfect sweetness, but no added sugar, with a lot of Thai curries you add palm sugar for example. And Im still amazed on how little salt I used.

This is pretty healthy food. Could replace rice for something healthier.

This blend is a recipe from a Swedish top chef (he is one of the judges on Swedish Masterchef as well). He is half Indian and its a Garam Masala from his family. Cant get that in stores.

Now Im excited to make my own blends.
