It depends what you mean by human. Assuming we find the means to leave the planet and start propagating throughout the galaxy and wider universe, there's the possibility of becoming so numerous that full extinction is nearly impossible. But by the time the sun dies, we'd have evolved into thousand or millions of different beings. What's known as a human today certainly wouldn't exist.

The Earth wouldn't even exist when the Sun dies because it'll expand and swallow the planet first.

I for one look forward to being swallowed and merging with Sun-Kun

We will likely go extinct or develop long range space travel within millennia at most. Anything regarding humanity billions of years from now is unimaginable.

By the time the sun goes out, the new humans will have already traversed the galaxy. The only remaining "old ones" will live out their last days on Earth in a defiant cause to show how much faith they have for the old gods. The new humans would be different from the humans of today. They probably wouldn't even look human. They may not even have a biological body. Earth will be remembered and forgotten as the progenitor birth place, long, long ago.
