But why? Why can't, for example, a werewolf's claws transmit the curse?

Bites already pass out venom from a lot of animals.

Only thing a claw can cause is "you got a hole in your gut"

Being bitten by something is highly likely to transmit an infection, a fact obvious to our ancestors. Of course, they didnt understand the exact mechanism, so they came up with an explanation that fit with their understanding of the world.

In a lot of vampire/werewolf mythos, you can consume the blood of one, or do rituals and stuff. Its not all bites

I actually didn't think it all the way through, zombies are more closely tied to rabies than werewolves.

Someone gets bit, loses their humanity, starts going nuts and bites others.
