Far too much oil, but the base ingredients seem good. I've never liked oil on vegetables, never understood it. It's like shredding a brick of cheese onto some pasta -- just why?

also the portion of fish and couscous needs to be swapped. Seems like far too little couscous.

It wasn't too much oil trust me, about a 2 tsp tossed with some kosher salt for a whole head of brocoli. It helps crisp up the bake when you toss it in the oven.

The salmon was baked at 425 for 12 min(wrapped in foil) then broiled for 3 minutes open face. I agree though it is a bit overcooked, was going for more of a blackened finish but I didn't want to completely overcook.

Usually keep it pretty simple. Bit of butter, fresh cracked pepper, salt (kosher preferably), lemon juice/wedges. I also have realized the importance of patting the pepper and salt into the fish.
