Temperature is a measurement of how quickly particles are vibrating. If the particles aren't touching anything, then they don't have a way to impart that energy directly to other particles. Additionally, the transfer of energy itself takes time so if extinguished quickly enough will retain the energy imparted into it as it will quickly be shed.

Essentially, you create it within a vacuum, using a similar contraption that we use for antimatter. If it's in a vacuum, the particles of the sun can never collide with anything so it doesn't matter how "hot" it is.

Fun fact: lightning is hotter than the surface of the sun.

Because for the species to survive, we will eventually have to colonize other planets. Our Sun is on a time limit and only has less than 1 billion years before its luminosity increases enough to render life on Earth impossible.
