It has some very well-crafted, but limited gameplay that requires you to master what the developers want you to master rather than just shooting shit at the screen until you find something that works to see you through.

It's really hard to compare Sekiro to other Soulsborne titles tbh. You really don't dodge much at all and if you try to play it like a Souls game you will get fucking bodied.

compared to Bloodborne, you can at least block a lot of the attacks, but doing so affects your posture, and if your posture gauge fills up, you're vulnerable for a second or two.

it's the same thing with the enemies, and parrying at the right time (as well as your attacks) fills up their posture gauge, and once that fills up, you can do a "death blow"

it's a cool mechanic, IMO, since you can beat your enemies without having to fully deplete their health.

the health thing is more like the Souls games, where you have a finite amount of charges from a gourd that replenishes whenever you rest at a shrine, and you have to search the world for more gourd seeds so you'll have more health charges.

you also get pellets, but you can't grind them like you can in Bloodborne.

stealth and jumping also means that you can either take on enemies how you want, or you can just ignore them all together.
