Honestly V is probably the best place to start as it has the most modern gameplay to it and every other game will feel extremely dated to you, even IV. Don't worry about the story, it's not directly connected to any of the other games.

I have no idea if the PS2 games hold up, but 3 might be too primitive for you, for one thing there's no map screen, and youcannot swim. Vice city is great for it's 80's vibe, and not surprisingly, SA has the best gameplay of the three(it's the only one where you won't die if you fall in the water).
