The self-identity of "queer" is pretty much flexible on how they define it, so there really isn't much use in thinking about it. It can be applied to literally anything other than straight (and likely even straight somehow).

I'm a non-binary person (recently figured it out and briefly lived as a trans woman) in a relationship with another non-binary person (who lived as a trans man for years), queer seems to be the best word for it

It, too, bothers me that our language seems to lack nuance with regards to sexual versus aesthetic versus romantic attraction, and our commonly-used words, as well as the Kinsey scale, fail to account for that distinction, nor the increased awareness of gender-versus-sex identity discrepancies.
