Press it, stir-fry it in oil and soy sauce or whatever.

You gotta press it to get all the excess water out, then its a simple matter of deciding what flavors you want it to absorb

however you cook it, I recommend using high heat so you can get a good sear on it, otherwise the texture is just like a sponge

P much this. You definitely want that sear and all the water out. Itll suck up whatever its in afterwards.

If you have the time, try making some mapo tofu. Its pretty easy to make and it tastes great.
