The only theory with any weight is the one about Ulman as there was an alternate ending shot involving him.

Its a quite simple movie overall. An recovering alcoholic man who feels like his wife and child kept him from a successful career takes a job as a caretaker in an isolated hotel over the winter. The hotel is haunted by ghosts and has an evil aura soaked into it. Jacks son Danny has powers that the hotel can use to strengthen itself so it turns Jack insane by using his rage and insecurity. It tries to get Jack to kill Danny but fails and his family escapes.

It's less of a documentary about theories regarding The Shining and more about a documentary on the people that create such convoluted ideas with little grounded reasoning and how unattached from reality they seem to be. The guy with the baby in the background comes to mind.
