I'm not sure if it's made better in Japan. Might be (although I also have the inclination that real Japanese sushi might be like real Italian pizza and my palette is more accustomed to the facsimile).

Real wasabi is expensive. It's also pretty good. The stuff we get in most sushi bars is just horseradish and sometimes mustard paste.

It's just picky where it grows. I think besides Japan, there's wasabi farms in...I want to say Oregon.

I've been to Japan. In most of the normal restaurants we went to, the wasabi was similar to the one you can get here in the US. In a couple of ultra fancy restaurants we went to, it was vastly different. It was there and then that I learned that "real wasabi" is super expensive and is rarely served.

I've had real wasabi once or twice. It was delicious. More herbal, less "intensity" & linger to the heat. That being said, I'm also just fine with the horseradish based "wasabi" that is served in most sushi bars.

Same. I ate at a few standardly-priced sushi places in Tokyo and Kyoto, and it's exactly the same. Most places in Japan probably don't serve real wasabi either because I'd say it's a pain in the ass to cultivate there as well.

I like the texture of real wasabi, and the flavor seems a bit more nuanced than horseradish. Horseradish is overpowering IMO

Wasabi powder is easily available and only moderately too damn expensive.
Fresh wasabi plants are essentially spicy unicorns. I've been looking to buying hydroponic equipment for growing it my basement - could probably make more money than I would growing basement marijuana.

Horseradish is actually related to it, so it's a good substitute, but the flavor of Wasabia japonica is described as less intense and more complex. I would love to give it a try, but the real stuff apparently sells for $70+/lb. because it's such a pain in the ass to cultivate.

Basically, it's not real wasabi unless you're at a restaurant and the actual wasabi root is brought to your table and grinded right there on the spot. As soon as it's grinded it instantly starts losing potency. Is this true?

Yeah, but it's not as "right damn now" as everyone seems to think.
Week-old wasabi goo in the fridge is still reasonably potent, if you stir it up pretty good.
