Classic versions have a better soundtrack, and I think more detailed environments. I do love N.Sane trilogy but it went for over the top cartoony whereas the original game had a more atmospheric/realistic vibe. Sane trilogy should have and could've sounded like. Josh Mancell (composer for the original Crash games) remastered the old tracks and they sound great.
