in Golden Kamuy manga it is said if you hunt bear, don't aim for the head because the skull can be so thick it would just shrug bullets off like rocks so aim for the heart instead.

granted, they are using late 1800s firearms so high caliber modern weapons might work (like obviously .50 cal would blast its head)

grizzly bear and cave bear probably. Not sure about brown bears, they are a lot smaller

In Alaska they say if you go into the wilderness to take with you no less than than a .44 cal gun in case a bear attacks. So it probably was true for cap and ball guns. Kodiak and Ussuri bears are absolutely massive and often grow bigger than polar bears.
