Probably stress, nervousness, not working probably as a team and used to lower standards. Plus I'm quite sure the showrunners specifically pick chefs they know will be shit and whiny because it makes good drama. --- "When it's cold, and when it's dark.... Im a chef myself and reasons why I think they fuck up often is because: They are unfamiliar with the new kitchen, nervous of being on camera, shitty team, Gordon Ramsay and team sabotaging and being abusive to the chefs.

The fridges in Kitchen Nightmares are the stuff of actual nightmares. Peel away the obligatory "You're putting raw meat next to cooked meat you fucking DONKEY" that Gordon does in literally every episode and you still see so much fucked up shit.

I imagine fuck-ups like that happen in a normal kitchen too, the show just balloons them to dramatic proportions. Like I'm sure even the occasional undercooked steak goes out even in a five star restaurant, then you compound that with the stress and the pressure.
