I know they like to have a huge chunk be dedicated to people figuring out what they are, how they work and that its not grandma anymore, but just once I want to see them be like Oh shit its a zombie like in Resident Evil, aim for their heads everyone!

Zombieland? Yes.

The Walking Dead? Word of God says no. Hence why the term "zombie" doesnt even exist in that universe, leading to them being called "walkers"

In the book Feed by Mira Grant there is a subgenre of bloggers and vloggers who create fictional scenarios that revolve around the zombies infesting the planet.

The Netflix show called "Daybreak"

There is a scene where the main character gets his arm bitten so right as he is about to cut it off, one of the other character says "What are you doing? This isn't the Walking Dead!". In the show only adults turn into crazed zombie like creatures. Children can not be infected even when bitten.

i believe in the Word War Z book, it exists, but it has been a long time since i read that.
i believe it probably exists in Dead Snow too, cause i think someone does a sort of "everybody knows this and this happens if you get bit"

that's an odd case; iirc it shares its universe with the one described in the Zombie Survival Guide, and in that world, they seem to have all the same zombie fiction we do, while also having dozens to hundreds of outbreaks throughout history. Weird universe, that.

just checked. IDK how they rationalize it in universe - from what I dug up, the Zombie Survival Guide exists in World War Z (known as the Civilian Survival Guide), and the zombies in Z follow all of the same rules and share the infection name as those described in the guide; so it looks like there very well may have been historical outbreaks; its definitely weird, though

For what its worth, the Guide is a great read. Much more funny than World War Z (doesn't take much), but a great piece

The basic story in World War Z is that the outbreak started ~20 years ago and ended ~10 years ago.
The main character in the story wrote the Zombie Survival Guide and it was released either during or after that outbreak.

It's funny how taboo it is to know what a zombie is. There are plenty of good vampire movies where people know what a vampire is. Same for werewolves. When it comes to zombies, they're almost always some unnamed and heretofore unknown concept.

in the Resident Evil 2 & 3 remakes, they refer to the undead as zombies, but I haven't paid enough attention to see if there's anything that suggests zombie fiction exists in their universe
