Cardinal sins:
  • having to throw out rotten veggies, salad bags and wilted herbs
  • Throwing out bones/fat
  • Throwing out stale or mouldy bread
  • Deciding there's "nothing to eat" because there no animal protein in the fridge

I wouldnt call throwing out moldy bread a cardinal sin. Once bacteria grows, it goes in the trash.

The trick is to not end up with mouldy bread in the first place.

Fresh bread stays in the counter. Older bread goes in the freezer. No bread goes in the fridge. Once it's threatening to become too old you turn it into croutons.

A bag of croutons costs like $1.50 at Publix, so I think I'll do that. They even have pumpernickel croutons

Start with flatbreads, Large margin for error and requires little to no proofing time or even yeast.

I really like the better than bullion jars for an easy stock. It's like a thick paste, and taste really good

I rarely make a homemade stock unless I bought whole chickens for something

Ive been pretty good at reducing our waste and making sure our leftovers are consumed, or prioritizing any foods that are close to past due. Like we opened a bag of tortillas so I made steak tacos for dinner, then breakfast tacos next day and tonight (a few days later) Im making chicken fajitas.

Yesterday I made banana bread after finding my husband shoved our bananas in some random pantry I rarely used. So they were very ripe.

I still have a few that need to be used. Thinking of making another banana bread loaf to freeze. Anyone have other ideas of what to do with them?

It turns back into oil when heated on the stove

So for example, if you've got some leftover bacon fat in the fridge, and you're gonna make hashbrowns, throw that in the pan instead of a cooking oil

Yeah, I really ought to get myself a dedicated container for meat drippings. Definitely glass, though. I'd hate to have to have it permeate a plastic container.

I've been putting the bread in the fridge my whole life and rarely ever seen mold. I mean, it has to be in there for a really long time. I converted my wife too and she's now a bread in fridge believer.

Honestly, banana bread would be my go-too in that situation too.

Brown stocks are made that way, yes. Afterwards you let it cool in the fridge and collect it from the top. Ta-da, you have schmaltz.
