At that point, GT hadn't even started airing in the US, DBZ was still relatively new on Toonami and I don't even think a busy young star like Aguilera was would have much time to watch it. There's probably no real reason why that poster is there; whoever worked on the music video just decided they wanted an anime poster in it, and settled on GT. It is quite nearly impossible to meet those conditions and not be a DBZ fan.
