Burger with Chipotle Aioli
Chicken pesto sandwich with basil aioli
Chocolate cake with goddamn garlic aioli

Yet no one servers authethic aioli which is just garlic and olive oil mixed together and emulsified. All those aiolis are garlic flavored mayo

yeah i was at a japanese restaurant that said "Chili Aioli" for its rolls

i tasted it and it was just sriracha mayo lol.

I believe 2016 is when the Millennials launched a developed the Aioli as part of a sneak attack on mayo. Mayo never saw it coming and joined the list of things Millennials killed.

Aioli is just a fancy way of saying mayo most of the time. So people like things they can't pronounce or see. It is getting obnoxious to see it listed just everywhere. But that's how restaurants run business, write a creative description that sounds appetizing so people buy it.

And real aioli is so much better. It's trickier to make but well worth it.

The first time I had that olive oil and garlic aioli was on a pizza and I got really confused when these fancy mayo sauces were also called aioli. As long as it's emulsified olive oil, it's correct, but I swear some people are making sauces with literal mayo and calling them "aioli"
