Vegan isn't my thing but I love rice dishes so I guess I'm going vegan for lunch lol. It's a recipe I made up, and not all that complicated but here you go:

2 tbsp canola
1 1/2 cup brown basmati rice
2 cup vegetable broth
1 mango
2 habaeros
garlic salt
minced onion

Puree about 2/3 of the mango with one habaero, dice the rest.

Add a bit of garlic salt and minced onion to the broth and stir. I did something like five dashes of each.

Warm up the oil in a medium-large skillet and dump the rice in to brown it, maybe 5 minutes or so.

Pour in the broth/seasonings mixture and the puree. Cover and simmer for 15 minutes.

Then uncover, stir in the diced mango ang habaero, simmer another 5 minutes (in theory; still waiting to see how long it will actually take) or until the liquid is gone.

I'm starting to think vegetable broth was a bad choice, as it kinda smells ehhhhhh right now but we'll see.

Huh, I was sure that's how you spell it.

Turns out it's habenero.

I've been saying it wrong too I guess.

I dunno, maybe.

I think in the future I'll try a different broth or evey just water with more/different seasonings, and definitely double both the mango and haba.
