I have nothing to hide about it and it's on my LinkedIn, but I feel this short job I had isn't relevant to the job I am applying for as much as a previous job and don't want my resume to extend passed a page.

If you can spare a line just to say the job and title it probably wouldn't hurt. Just so it doesn't look like you have a gap in employment.

But if it was a short period it probably doesn't matter.

Resumes aren't about being completely truthful or accurate

they're about making you look good enough to get your foot in the door

Not at all, your resume should only be a single page to begin with so you just put the highlights.

You should only put jobs that are pertinent to what you're applying for anyways. As long as it doesn't look like you had a lapse in employment (which is easily fixed with a little fibbing) who cares.
