someone somehow became immortal? Would old memories just start getting "deleted"? Or once they reach capacity would they no longer be able to hold any more memories? Also how long would someone have to live to get to that point?

You are forgetting memories all the time. There's some study that says we can only remember some < 200 name to face combinations at one time.
