imgtc is dead and i dont want to use imgur bloated shit of a web page.

the sauce is curry sauce i made from curry blocks and chilli.

vegetables are baked potato, onion and garlic seasoned with allspice powder, sprinkled bit of oil, salt and pepper.

I like to get a little more browning that than by doing a fast, hot sear then finishing the cook in the oven, personally. It looks great tho, nice and evenly pink.

It is just preference i guess. I was craving something spicy. The steak and vegs are seasoned so it would taste as good without sauces.

I want to try brown + oven roast technique some day but my oven is too small for my pans.

I could buy a new full cast iron pan that fits in there or those trays that can be used on open fire.

Alternatively you can try broiling at like 500 in the oven as well. It comes out very nice, and works for other cuts of beef too. I enjoy korean style spare ribs like that.

For how long?

I have practiced with pan sear several times and the first 2 was bad (didn't bring it to room temp before cooking, the second was too done and i think i pierced the meat or something so it came out dry like shoe sole) i have been getting perfect and juicy like this after the 3rd try. Love it when the juices are seeping out when you cut and chew it like squeezing sponge

prob the poc but I thought it was undercooked pork at first. Anyway I like it rarer personally. Looks good other than it lacks a better sear.

Prep meat, marinade if done so, otherwise season and let it get to room temp.

Then I heat a pan up, add neutral oil (not olive oil etc, high temp oil).

When the oil just starts to give a little bit of smoke I add the meat, sear, flip, sear a while, add butter and whatever flavorings like garlic, herbs, chili etc. Baste and feel with my finger for doneness, then let it rest.

yeah, i think the oil isn't hot enough and alluminium pan isn't optimal. cast iron pan should allow more heat on the surface. i do have to buy one someday haha.
