A bunch of different people from different parts of china came up with elaborate dances (forms) and somebody decided to use the umbrella term of "kung fu" for them. Muay Thai is nice, and it's far superior in a consensual match with rules, but kicking may be an issue in a real fight. You definitely want to have the possibility of kicking, though, and the clinch/knee/elbow part is invaluable if you end at a close distance. Judo is also fairly practical. Everything else offers little in terms of real self defense.
