I've cooked meals as late as 3am. My wife will sometimes question my sanity but I just eat when I'm hungry.

With my family, it doesnt matter. My mom and sister have a hard time falling asleep and will wake up frequently no matter what, and my dad sleeps through everything. Might as well cook or bake if I feel like it. No one minds, and certainly no one complains about getting up in the morning to a plate of fresh cookies in the kitchen.
