What do you not enjoy?
Try not to put value into your items. That sword you broke will be replaced in the next fight. Don't feel obligated to check everything out. There's not too many unique items or anything you can miss. Focus on one thing if you feel overwhelmed. I like cooking and making potions.
Buying and decorating my house. I enjoyed lots of the sidequets. Like the one where you find a shit tons of weapons to show this kid in the town your house is in. Or Tarrey Town. Fishing. Upgrading armor. Hoarding items just because its ridiculous how much stuff you can carry. Pilliging the castle after blood moons. --- I think I need a drink. Find armor that lets you go into the hot/cold areas without having to use potions. Being able to travel unrestricted makes the game a lot more enjoyable.

Honestly, if it hasn't grabbed you within a few hours after exiting the Great Plateau, that's probably not going to change, and there's nothing wrong with you if it doesn't appeal to you. This might stir some interest in you, seeing all the fun crazy shit you can do with the combat engine: --- Simple questions deserve long-winded answers that no one will bother to read. ...
