So American Chinese food or real Chinese food? Not sure if they have an English name, but my favorite dishes are the stir fried clams with ground pork, and the salt pepper garlic squid.

I was born in Hong Kong so I had the real stuff.

That said, various dim sum dishes (cheung fun, hargow, beef balls, etc.) and beef chow fun are the best shit.

Typically it's stuff you have to ferret out by going to a Chinatown or some equivalent.

Dim sum in particular is hard to just run across unless you go looking for it (how hard that is depends on where you live but generally when you want it, you go somewhere that you know will have it). Certain noodle preparation techniques (like the aforementioned beef chow fun) is also exclusive to the real McCoy.

Some places I've been claim to have beef chow fun but I tried it and found that it wasn't genuine.

I see.

I remember at my office for the Christmas party, Chung used to bring some Chinese food from Chinatown. There was this shrimp with this syrupy coating that was one of the best things I ever tasted.
