...but they're so HEAVY. I can't wield any of them without seriously crippling my dodge rolls, and it's not as if I've got starting game levels or anything. Heck I've been focusing my levels on Strength, Endurance and Vitality. I'm mostly able to get by on regular enemies with my Winged Spear, but I need the Black Knight Greatsword's damage to have any chance against bosses.

Is there something I'm missing, or have I just screwed myself over statswise?

I used the claymore all game long and had medium rolls throughout...

I remember getting the black knight straight sword from the first black knight that you come across, and it carrying me throughout the game

I just leveled whatever stat that allowed the character to be able to use it and fast roll, and the rest went into endurance and vitality (or whatever the life bar is)

and maybe some into attunement, since the level of the fire glove, and not your stats, affect the strength of your pyromancy

Which Dark Souls?
Dark Souls 1, the claymore and BKS are roughly on the same tier of weight - just usually remove your helm or gloves for lighter ones that the undead merchant sells.
DS2: yeah that game is wonky, just take whatever armor, armor is kinda pointless.
DS3: Just wear anything in all slots, otherwise you get lower defense
