REmake HD edition, then RE2 and RE3 for PS1. For RE2, you could just wait for the its remake in January, but the original and the remake will be 2 completely different experiences, and RE3 likely will not have a remade version anytime soon..so you may as well just get 2 & 3 and play 'em now.

I was thinking mainly 1-7 lol.

RE0 and Code Veronica are both good recommendations. I enjoy the Revelations series too, since they at least try to go back to being more focused on atmosphere and horror and feel closer to classic RE than 5 & 6 do.
