They say don't do that because it will make you hate it. Instead they say to find something you tolerate. Ok.....but wouldn't doing something you tolerate also make you wind up hating it?

I wouldn't say don't follow your passion
Just don't be stupid. I mean if your passion is Rock Music and your dream is to be a Big Rock Star, that's fine. Write Music, practice, get good. BUT get a job. Earn Money and pay the bills as you progress. People who just do nothing but write/perform music end up dying young as depressed, broke losers because they only chased their passion with no logic or planning behind it --- ^ Hey now that's completely unfair. https://imgtc.com/i/14JHfrt.jpg ... Turning a passion into something you have to do to make money can have the effect of souring you on that passion.
You're not going to enjoy work, so you should keep the things you do like separate, as respites. --- kin to all that throbs ... Copied to Clipboard!

Find something and be passonate about it. Everyone going after their passion leaves only room for the best in a limited amount of things

That has nothing to do with "don't follow your passion." The reason, first of all, is that many of your passions tend to be leisure things like movies, music, sports, etc, and for that reason they tend not to be profitable because everyone else is after those jobs as well. Try making a living as a musician in any city, I dare you. Second, doing something for a living doesn't make you hate it. It's quite possible to love what you do despite it not being something you'd care about normally. But at the same time, if you break down something you normally enjoy into bits and pieces, and the job itself is only OK, it doesn't leave you with anything left.
