Pan fried cod on a bed of quick pickled carrots and roasted asparragus with a pea puree and topped with unsmoked bacon and melted butter.

Best part of the dish: Asparagus and the pea puree worked so well with the cod. The use of rosemary and thai basil was really great combo.

Worst: I overdid the quick pickle with the carrots, became too strong of vinegar. Next time I will use apple cider vinegar, and much less. It wasn't balanced with the rest, but when I did have a small piece of the carrots with the rest it did balance out the sweetness of the pea puree and the saltiness of the fish and asparagus.

I'm a fatty and it still filled me. I'm sated, yeah I could eat like 3 times more, but no need to eat when you are already full.

But yeah, if I make this for others, I want to have an appetizer and a dessert to go with. Then it's just enough.

Not yet. It's something I'll maybe do later. I tried to film cooking this, but it just got messy for me. I need to plan filming, also need something to hold my phone etc.

I like vinegar too, but it wasnt balanced. It took over all the other flavors if you ate more than one ribbon with the food.
