I could see it going either way.
Gus' partner said Gus was as close to him as if he was his brother, but that could have been because he didn't want to share that they were lovers. but Hector was also antagonistic towards them from the getgo, and just meant to insult them. Thats probably my favorite episode of the show. I havent seen Better Call Saul. Do they go more into the Don Eladio storyline there?

I liked season five the first time I watched through the series, and I wonder if it's going to hold up, for me, since I know a lot of people considered it to be the show's decline in quality

Basically half of BCS is about Mike/Gus/Hector and some other drug players not seen in BB. Very similar vibes to BB in that half of the show. The other half is Sauls origin story.
