Eating 2 was too much ughh. But the batter I made was for 4 servings. I have 2 ready to put in the oven. Maybe I'll do it later, tho I think they will lose the fluffiness.

He lined the sides of the ramekins with butter and sugar so the batter doesn't stick to the sides allowing the egg whites to keep rising.

Take all these pictures to someone and just say here this is what I do. Or find someone with money and restaurant smarts and team up. But I'm with this dude, you gotta figure a way to do this shit for a living or somehow to get paid.

I don't cook a whole lot, although i've gotten more into it recently, but I watch a lot of Ramsay shows and he's said multiple times that the consistency of egg whites when making a souffle is the key.

It deflated a bit right after the pics. Just means you weren't served immedietly it was baked.

I had one ramekin in the fridge overnight with the batter in it to see how it would bake today. It's not bad. Didn't rise as much and deflated quicker, and the texture is a bit drier, but doesn't matter since it's still tasty af.
