Costco has ground bison in a big fat tube (Costco-sized) for a reasonable price.

I'll take bison over beef anytime. It really is a shame the cattle industry got everyone in America hooked on beef. The native Americans had it right - Bison is tastier, healthier and better in every way.

When I want to treat myself I get a bison ribeye but yeah it's expensive.

Yeah it is definitely the price. I love bison meat as well, but it is always tough to justify the price of it compared to beef. I would certainly eat bison a lot more if the price was close to comparable and more widely available.

I prefer bison, but cost and availability are not the same. I generally only eat beef once a week or so, though, so it's not really a big deal for me.

I don't eat beef much really because I can get boneless chicken breasts for $1.29/lb while even ground chuck is $4.99 while actual cuts of beef are more expensive than my culinary skills justify. If I could cook better I might buy some steaks every now and then, but as it is, nah.

I've had it and it's ok but really the cattle industry is to the food industry what the oil industry is to energy production: corrupt and stuck in the past.

If more people asked for & ate bison, market forces would drive the price down.

Moose and elk are my favourite game meat and on par with beef imo.

I don't have time to dig too deeply right now, but the wikipedia page mentioned that most have DNA from domesticated bovines. It makes sense logically though. Introduce some domesticated genes to make the process a little faster, and also have a bit of a shortcut in terms of having a good amount of fat in the steaks.
