You can disable Bixby and the Bixby button in the settings menu. I'm not sure why Samsung is trying to push this on people. It doesn't make the slightest bit of sense when the Google Assistant exists.

I've never really bought into the whole virtual assistant thing. Google Assistant, Siri, Bixby - it doesn't matter what it is.

Though I've disabled the Bixby button and Bixby Home, I do utilize Bixby briefing in the stock clock app. She'll call out the time, temparature and select news articles when the alarm rings.
