You suddenly sneeze, and you had no time to block it. It goes into the food you're making. Nobody else is around, nobody saw it, and nobody would know if you didn't say anything. But the customers are hungry and impatient! If you don't quickly serve their food, you will be the one getting in trouble. So what do you do? They're unlikely to detect a bit of saliva. And if they got sick, it's not like they could pinpoint it on you specifically.
