Celeste is a great challenging indie platformer that surprisingly has a good story.
Go for Disgaea 5 and/or Xenoblade 2 if you want RPGs.
Are you interested in Splatoon at all? Go for that if you want an unconventional shooter.
Mario Tennis Aces is also coming out pretty soon.

Odyssey and BotW are priorities, Do you care about games that are on PS4/PC as well? There is a lot of indies and multiplats that are really worth it on switch.

Splatoon was fun and a lot of people love it but I lost interest after a couple weeks. Just downloaded hollow night this morning so looking forward to playing that later today.

Bloodstained: Curse of the Moon An 8(ish) bit styled game that plays like a love letter to old school Castlevania games.

Golf Story A surprisingly fun and charming rpg revolving around golf. Even if you dislike golf games this has a fun and quirky appeal.

Celeste as others have mentioned, its a challenging platformer with a notably touching story and interesting characters.

If you havent played them on other consoles consider:
Hollow Knight fun stylized metroidvania

Donkey Kong Country: Tropical FreezeAnother challenging platformer

Zelda Hyrule Warriors Basically Dynasty Warriors but with a Zelda skin but still pretty fun if a little mindless at times.

Xenoblade 2 if you like action rpgs

Stardew ValleyAn indie devs take on Harvest Moon with a few added mechanics.

Also Bayonetta 2 was fantastic. Definitely play if you like hack and slash games like Devil May Cry

The Switch version feels a lot better than the 3DS version.
That said if you already heavily played the previous versions I dunno how I'd feel about recommending this one. The only major difference is that Adventure Mode progression is different in the Switch version.

I currently have Mario Odyssey, Mario + Rabbids and Xenoblade 2. I plan on getting Crash N-Sane Trilogy when that comes out (I lack a PS4, you see). Also plan on getting Splatoon 2 at some point.

Oh yeah I've also played the Wii U version of Tropical Freeze. I've got Stardew Valley on PS4 as well.

Octopath looks pretty cool. Is Dragon Quest XI coming to switch or is that just PS4?

It is a solid RPG, Ys is primarily about fast action and tense boss battles. It is a very good game, but if you go in wanting a world-spanning adventure with a sprawling story, you will probably be disappointed.
