IIRC it's a result of being an English version of a Japanese version of two English words.

Pokemon = Pocket Monsters
In Japan the English word "pocket" would be pronounced "poh-keh-toh." So over there Pokemon is pronounced "poh-keh-mohn."

That sounds weird as fuck to English ears, so they tried to put an English spin on it, thus "poe-kay-mon."
