Related to this it would be really great if the main quest had different options based on how you wanted to play. Right now Elder Scrolls games have this weird tonal issue where you could be the baddest most awful person of all time, but you ultimately the main quest takes you down a decidedly heroic path. So if you really wanted to play a monster of a person you either have to be temporarily heroic or just not do the main quest.

Anything from Akavir, really. Doesn't Nirn also have some sort of species of psychic slugmen too? Playing as one of those would be badass.

Admittedly, it would be a pretty huge stretch for a Daedra to just walk to the market and purchase a few sweet rolls for the fam with no one blinking an eye, but fuck it.

Yeah the Maormer are already in ESO if I remember correctly. It'd be cool to see em in a mainline game.

And yeah definitely the different Kitty Kat races.

I'd have to check up on lore, but I'm pretty sure Argonians have different subraces as well. Those would be cool to see.

bethesda could make anything happen in the next game if they wanted to

hell they could do an ass pull and bring the dwarves back, although they won't because they know rebel would probably commit seppuku if they did =/

While I agree with your point that Bethesda can do anything, I don't think they'll touch the Dwemer. I think Bethesda realizes that some things in their universe should just remain vague and unexplained.
