Last one I saw was literally Avengers 1.

How do I go about doing my homework for Infinity War? Is there any one service that has a big chunk of them on it like Netflix or something? Or do I need to hunt them down across multiple platforms like Starz, HBO, etc.

Or even worse, are they not really on any of those and I need to find them through other means.

Multiple platforms, afaik. Netflix has a bunch for free and Amazon Prime has some to rent.

Avengers 1 is important (one down).

I'd also see all of the following if possible (in chronological order):
Guardians of the Galaxy Vol. I
Guardians of the Galaxy Vol. II
Doctor Strange
Avengers: Age of Ultron
Captain America: Civil War
Thor: Ragnarok

If you have time to see more, then I'd watch these two between Civil War and Ragnarok:
Spiderman: Homecoming
Black Panther

Also, not really important to Infinity War but arguably the best MCU film:
Captain America: The Winter Soldier
