I imagine it'll probably taste pretty sub-par.
Meat needs the right amount of fat to be tasty. I spent six months in Germany where eating Pferdefleisch is totally normal. You're not missing all THAT much, it's more expensive than beef but it tastes better. It's the same as goat meat. It's not really worth getting out of shape over. Close enough to beef.
