The only downside I have find precision wise with a steam controller is after 2,000 hours and over a year is the A button was starting to stick. Brushed out with a toothbrush, and doesn't stick, but has that miniscule difference in pushing with the other buttons.

What controller SHOULD I have used to beat Cuphead, Cave Story, and Dark Souls with?

Well its a platformer, so of course controller is the way to go.

Unless.. are there people who speed run with kb/m for platformers that don't require exploiting a keyboard specifically (i.e. pushing 3 directions at once)?

I recall VVVVVV speed runners prefer a keyboard and mouse.

The Xbox One D-pad (regular and Elite) fixed that issue and they're just standard 4-ways. But the main thing about the Elite here is the build quality since you mentioned the A button sticking.

I got one for the paddles. Not sure how useful it is for games that don't involve twin sticks though.

That's only a problem for some keyboards. I use a mechanical keyboard, so I have unlimited key rollover. I find it better than controller in most cases (largely me being more accustomed to it, the only important thing for most games is how responsive your device is and how used to it you are). Even in games with 360 degree movement I generally find it more comfortable to use 8 directional movement on a keyboard than using a controller. That can depend on the game though. Some games are awful for keyboard because you just need to have sticks for them.
