It's weird because he's an extremely good butcher. The quality of his meat as well as his pies are beyond exceptional. But I guess people get ingrained into habits and it seems people down this end of scotland only ever ask for pork bones for their dogs.

I don't think that's what this is about, I'm just adopting what it's typically called in Japanese cuisine, to my knowledge. Every ramen recipe I've looked up refers to it as broth.

Except it fucking is. The phrase "bone broth" literally just means stock. If the term existed in any capacity before the recent health food boom, it was used by virtually no one, and was redundant anyway.

Broth is made from meat scraps, while stock is made from carcass and bones. Effectively calling it bone BROTH makes no sense since stock is just superior broth.

I don't think that's what this is about, I'm just adopting what it's typically called in Japanese cuisine, to my knowledge. Every ramen recipe I've looked up refers to it as broth.

Aha. Well, that's because in ramen recipes you typically boil the meat you're serving with it to create broth as the base, rather than using stock or "bone broth" if you must.
You totally can use stock (and me and the Mrs. do this all the time) but you need to have it made already.
