I liked them in Morrowind and Oblivion but I mostly hoard Skyrim potions despite them being so common. They're just a cool collectible, the vanilla game was never hard.

The system can so easily break the game if you're so inclined. I'd usually only push it as far as boosting my alchemy once and then making some powerful potions.

Some were quite useful. Usually keep a utility belt of weird trick potions and then have a few heals for emergencies.

No, only health potion and on rare occasion if I needed to be underwater for a while something that supported that.

And Smithing and Enchanting potions are very useful once you're gotten a decent amount of skill.
