Probably Ultimecia from FFVIII

Junction Water as your elemental attack, keep the Meltdowns up, and Eden the crap out of her. Battle will be over inside of 20 minutes.
As clearly stated in the OP, the gameplay doesn't matter. We are talking about most powerful canonical boss.

Darth Nihilus from Star Wars Knights of the Old Republic 2.

He hungered for the Force for such a degree that he drained entire star systems of it, killing billions of people at once.

I was going to say this.

Don't know if he satisfies the canonical part of the topic title anymore

Didn't Kreia explain that power isn't the right word? Nihilus was a slave to his hunger.

Greek gods were like overpowered humans.
Even if you were dopped in the invincibility river and had all plants and animals promise to not kill you, you can easily get killed, a normal human should be able to kill some of them with some luck.

Unlike Brahman or Nyalohothep he is multiversal and manifests wherever there is sentient life, which is why he keeps coming back, despite having supposedly 'died' several times. May have actually created the SMT multiverse.

Actually, regarding YHVH, he is merely the avatar of a greater entity known as the Great Will, which is referenced in nearly every instance that YHVH or other avatars of the Great Will are present in the SMT series.

Funny thing is, with how SMT Devil Survivor 2: Record Breaker handles the divine heirarchy of the universal order, the YHVH-equivalent Administrators of the Akashic Record have their own version of the Great Will, which I named in an earlier post: The Divine Order, Canopus, the overseer of the Administrative System. It could not be killed permanently, and the only way to completely restore the world's freedom from the Administrative System was to create an entire reality where he did not exist (and could not influence), in essence.

Didn't Kreia explain that power isn't the right word? Nihilus was a slave to his hunger.

I mean that's true, but he still seems objectively more "powerful" than any other character in the game, and probably any Star Wars lore. You are only able to defeat him through the poorly explained plot armor of your character being a unique "wound" in the Force.

If that's how you want to define it. Nihilius didn't seem to have power over his hunger. Sometimes I wondered if he was possibly a fate of Meetra.
